Turkey Meatballs

This recipe comes from “The Eat Clean Diet Cookbook”. In our house, we LOVE spaghetti and meatballs! Here is a great clean way to make meatballs.  You can serve them cold and sliced on your lunchtime pita, or serve them hot with some all natural, whole grain pasta and all natural pasta sauce (Ragu is even making an organic sauce now, and it’s good!).  Delicious!

Ingredients:

1 1/2 lbs lean ground turkey (if vegetarian, use textured vegetable protein)

1/2 cup finely chopped onion

1 egg, lightly beaten

1 cup oat bran (or bread crumbs)

2 Tbsp fresh parsley, finely chopped

2 Tbsp fresh basil, finely chopped

2 Tbsp fresh oregano, finely chopped

2 cloves garlic, passed through a garlic press

1 tsp sea salt

1 tsp freshly ground black pepper

Preperation:

1. Preheat oven to 400 degrees

2. In a large bowl, place egg and oat bran.  Add spices and mix well.  Add remaining ingredients and mix well. Using an ice cream scoop, make meatballs and place on prepared cookie sheet. Place in hot oven and bake for 20 minutes or until golden brown.
